A light and spicy fresh green apple chutney heavy on the ginger and garlic and perfect spooned over any number of hearty meats like steak or pork.
1) Core apple and chop. Leave the skin on and add to a blender with a spoonful of water. Pulse until the apple is liquified. Scrape down the sides to make sure it’s all being pulsed evenly.
2) Add chopped chiles (with seeds 1 will be spicy and 2 will be very spicy). Add sugar, salt, ginger, and garlic and pulse again. Finally add cilantro (leaves and stem) and lime juice. Pulse a few more times, scraping down the mixture.
3) Taste the chutney and adjust seasoning with more salt or lime.
Use immediately on grilled proteins or as a sandwich spread or store in the fridge. If stored, the flavors will mellow so I like it best the same day.
