You Say Tomato…
This is the first of what will hopefully be many successful and delicious meal plans and it seemed appropriate to kick it off by centering this week’s plan around the lovely tomato. This time of year you should be able to get wonderfully ripe tomatoes almost anywhere. It’ll be hard to find a bad tomato!
That said, if you have a local market or if you’re lucky enough to have a garden, then you will be in serious luck. I like to eat enough of these perfect August tomatoes that it doesn’t even bother me when I can’t get them in December.
This weekly meal plan includes:
- No Cook Summer Tomato Pasta with Chopped Italian Salad
- Spicy Gazpacho and Cheesy Garlic Bread
- Roma Tomato and Chickpea Paprika Chicken and Israeli Couscous Salad
- BLT Benedicts and my favorite fresh pico de gallo
