Kid Friendly Fish Tacos: These delicious fish tacos are easy to make and a healthy dinner that kids will LOVE. Adult-approved as well!
Ingredients
8-10small flour tortillas
10oz.1 package Dr. Praeger’s Lightly Breaded Fishies
½cupsour cream
1avocado, diced
Not Spicy Pineapple Salsa:
2cupsdiced pineapple
1ear sweet corn, cooked
½cupdiced red onion
1lime, juice only
1tablespoonminced cilantro
Instructions
Preheat oven to 425 degrees F. Cook Lightly Breaded Fishies according to package. They should be crispy on the exterior when done.
Meanwhile, make pineapple salsa by microwaving ear of corn (in the husk) for 2 minutes on high. Then peel and chop off kernels. Stir together with other salsa ingredients and season with a pinch of salt.
Assemble tacos by spreading a little sour cream onto a tortilla. Top with avocado, cooked Fishies, and a few spoonfuls of salsa.
