Add the chicken to your pressure cooker with garlic, ginger, curry powder, coconut milk, and water.
The full post has instructions for slow cooker, pot, and pressure cooker, but the pressure cooker is my favorite way to make this. When the chicken is done shred it up and stir it back into the simmered sauce.
The sauce might seem a bit curdled when you take the chicken out. If you sauté it for a few minutes to thicken, it will smooth out and thicken further when you stir your chicken back in.
Serve the chicken and sauce over rice with cucumbers, herbs, and any sauces you like! YUM!
