I love simple fresh vegetables on a bagel like this and some acidic sharpness as well from stuff like capers and chives.

Making the Tuna Mixture

I kept my tuna mixture really easy and simple for this. The idea is that you can store it together basically while you make coffee! Tuna, some lemon zest, and a pinch of salt is all you need.

Now it’s time to assemble! This is about as easy as it gets. Toast your bagel and smear on some cream cheese. Then top with red onion and tomato.

Pile your tuna mixture on high and then garnish with chives and capers. This is a delicious breakfast that is ready in just a few minutes!

In theory you can make some of the stuff for these Tuna Breakfast Bagels in advance. You could slice the veggies the night before and mix together the tuna, but honestly it’s such a fast recipe that I like to do it fresh in the morning.

This epic Breakfast Bagel is stacked high with Bumble Bee Albacore Tuna mixed with lemon zest, ripe vegetables, cream cheese, and capers and chives! YUM!

Ingredients 

  • 1 5oz can Bumble Bee® Solid White Albacore Tuna
  • 1 tablespoon lemon zest, about 1 small lemon
  • Pinch of salt
  • 2 bagels, toasted
  • 4-6 ounces cream cheese
  • 1 ripe tomato, sliced thin
  • ¼ red onion, sliced thin
  • 2 tablespoons capers
  • Fresh chives, garnish

Instructions

  • In a small bowl, stir together drained tuna, lemon zest, and a pinch of salt.
  • Toast bagels and smear each bagel half with cream cheese.
  • Top cream cheese with thin tomato slices and red onion slices. Season vegetables with a pinch of salt.
  • Divide tuna mixture between bagels.
  • Garnish with capers and chives and serve immediately.
