This week I had to take an emergency trip to New Mexico to help my grandmother move into a nursing home. My mom and I are going together to clean out her house and get her all set up in her new home which I think will be a great move for her.

She will be in a social environment and won’t have to worry about cooking or driving anymore.

Unfortunately, I’ll be working pretty hard the whole time I’m there making sure she is comfortable, but hopefully I can get a few good Mexican meals also while I’m there!

The Perfect Scallop – I’ve secretly watching Hell’s Kitchen this season and it is amazing to me how often those very experienced cooks mess up scallops. Like… they just can’t do it right. This is a good walkthrough and exactly what I do when I’m cooking them at home. They always come out great. (@ Arugula Files)

Caterpillar Rolls – When Betsy and I go out to sushi, we almost always get some sort of roll wrapped in avocado. This one looks just perfect. (@ No Recipes)

Cilantro Chicken – Cilantro haters look away! This recipe is jam-packed with cilantro and I love every leaf of it. The chicken is marinated in what is basically a cilantro slurry. Sign me up! (@ Recipe Girl)

    After living in NM for 10 years I came away with a deep appreciation for Southwestern style Mexican food. Much different than the more traditional style Mexican food we typically see here on the Western Slope.

    Hope you get to have a few SW Mexican meals. Don’t know where you are in NM but if it’s Albuquerque the Golden Crown Panaderia Bakery is highly recommended.

  2. I LOVE New Mexican food! If you’re near Albuquerque, you MUST go to Standard Diner and indulge in their calamari. Random, I know, but it’s the best I’ve ever had. If you’re closer to Sante Fe, check out Harry’s Roadhouse for breakfast. I love their Lemon Ricotta Pancakes and Blue Cornmeal Waffle and even though it’s a Pennsylvania thing, their Dutch Scrapple is off the hook!

  3. Love New Mexico cuisine. My son was born there and his first baby food was there and his first “real” food was mashed black beans. Green Chili sauce with Carnitas Yum! You should find some beautiful chili riestras and garlic braids already. Enjoy the spice.
