Garlic Butter Cod

A simple preparation for white fish, like cod. Baked in a lemon-butter sauce, the fish is tender, flakey and perfect with a side salad or potato side!
Ingredients
4 4-5oz cod fillets
1/4 cup butter
1 lemon, juice only
2 cloves garlic, sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley, garnish
Directions
- Preheat oven to 375˚ F. In a small saucepan, combine butter, garlic, lemon, and salt and pepper. Heat over low heat until butter is melted and garlic is fragrant. Remove from heat.
- Lay out cod fillets in a baking dish and drizzle with butter sauce.
- Bake the cod for 15-18 minutes at 375˚ F. Fish is safe to eat at 145˚F and will be flaky when it is done cooking. Try not to overcook the fish as it can dry out, although the butter sauce helps if you overcook it slightly.
- Sprinkle finished cod with chopped fresh parsley and serve with sides of your choice.
