As the weather starts to warm up a bit, my tastes start to move away from heavier dishes and toward light, fresh flavors that are easy to toss together.

This summer we are doing some serious landscaping work on our yard and I crave stuff like this that I can make in a few minutes and doesn’t weigh me down too much. The combo of slightly sweetened yogurt, crunchy granola, and all the fruit you can handle, all rolled into a Flatout Flatbread wrap is such a great way to start the day.

I tried to use some fun colors to make a rainbow breakfast wrap, but the truth is that any fruit you have on hand would work great!

These quick wraps are so quick to make an a perfect way to start the day. Packed with granola, Greek yogurt, and colorful fruits.

Ingredients

4 flatbread wraps
1 cup Greek yogurt
2 tablespoons honey
1 cup granola
1 banana, sliced thin
1 large mango, sliced thin
2 kiwi, sliced thin
8 strawberries, sliced thin
1 cup blueberries

Directions

1) Stir together Greek yogurt and honey.

2) Slice all fruit thin so it lays flat in the wrap. I like this video for mango slicing tips.

3) Spread about 1/4 cup of yogurt mixture on a flatbread and top with 1/4 cup granola in an even layer.

4) Lay out fruit in any order you want. I like starting with banana on one end and ending with blueberries on the other end.

5) Roll the wrap into a tight cylinder and use a serrated knife to cut it in half. Serve immediately!

This recipe requires zero cooking. You don’t even need to look at your stove.

Just stir together some Greek yogurt and honey. This acts as a base for the wraps and gives them a little creamy element that goes well with the acid in the all the fruit we are about to stuff in these wraps.

How could you not love this?

Try to slice your fruit in thin, even slices so it lays down nicely in the wrap. The hardest one, by far, is the mango. I like to peel the mango and then slice off the “cheeks” of the fruit and then slice those into thin segments.

Making the Wraps

This recipe will make enough for four wraps, but of course you could scale it down for one or two wraps. The wraps end up being pretty filling and one is a great breakfast.

To make a wrap, just spread the yogurt mix on a flatbread. Then sprinkle on some granola. The granola is a crucial, crunchy texture! Don’t skip it!

Then stack on your fruit. You can use any fruit in any order, but if you’re going for a fun rainbow look, try this order out:

I recommend chopping the wrap in half for easier eating and use a serrated knife so it cuts cleanly through the wrap.

  2. Do you think these could be premade and frozen? Wasn’t sure about keeping in frig because of bananas.

    1. Hmm… I think the fruit would break down a lot. I’m not sure I would freeze them. They are pretty quick to make so I’d just make them fresh. Good luck!
