Every year in October millions of pumpkins are gutted, decorated, and crushed in America. It’s a strange tradition if you think about it because in the rest of the world pumpkins are food.

Have no fear. There is more to pumpkin than pie and this meal plan gets down to it. I wanted to show how it’s possible to make savory, delicious dishes with pumpkin and the key is starting with fresh, roasted pumpkin. This meal plan includes instructions on how to roast a few small pumpkins when you have the time so you have fresh roasted pumpkin for use throughout the week!

Can you use canned pumpkin for the recipes? Yes, with one exception. The pumpkin fajitas really do need the real thing.
