I’m not sure if you knew this or not (sarcasm) but Colorado became the first state to sell legal, recreational marijuana on Wednesday. You probably know this though if you’ve been exposed to any media at all over the last few days.
Here’s the thing: I really like that I live in the state that is blazing the trail on legalized marijuana. I think if the tax predictions are true and it’s able to be regulated effectively and people act responsibly, many states will follow.
That said, I hope that it doesn’t become all Colorado is about. There are a lot of amazing activities to do in Colorado and, to be honest, the whole legal weed thing is not even in my top 10 best things about CO list.
If you are reading this and happen to be in Colorado, support the new industry if that’s your thing. If you choose to do so, please do so responsibly. The world is seriously watching.
Whether or not you live in Colorado, please don’t let the constant weed coverage give you the impression that it’s all Colorado is about. There is still snow in the mountains, beautiful hiking and trails, and lots of friendly outgoing people.
One of my resolutions this year is to try out some new cuisines that are a bit outside of my comfort zone. I might as well not waste time on that. I thought I would let you guys pick one for me to try out next week!

Black Eyed Pea Salad – Traditionally, black eyed peas are prepared with pork in a rich stew. This is a nice twist on the classic featuring kale and quinoa. Looks really good and refreshing. (@ Summer Tomato)
