Betsy and I have been pretty good about tackling Colorado life, but one thing that we haven’t been doing is taking many backpacking trips.
I used to be pretty into backpacking. In fact, I spent a summer in college with a good friend backpacking around the Wyoming wilderness.
There’s really nothing like hiking into a remote place and setting up a camp site and spending a few nights away from all of the hustle and bustle of life.
It has been hard for us to find time to do it this year (especially with my knee surgery), but this weekend we are making it happen. We are doing a short trip to the Gunnison national forest to hike into a remote lake called Henry Lake that sits a little under 12,000 feet. We are going to have to go slow due to my knee, but I think we should be able to make it.
And we are obviously bringing Porter so I think he will have a blast.
I’m taking my camera so I’m hoping to get some cool nature shots. I even bought a new polarized lens filter! If I get some good ones I’ll post them sometime next week maybe!

Wild Rice Salad – I really love wild rice in place of standard rice. It has such a great flavor and texture that you can almost make a meal out of it. I would make this salad for weekday lunches! (@ The Purple Foodie)
Taiwanese Grilled Corn – When it comes to grilling corn, I’m pretty boring. Throw it on with some salt and pepper and butter and call it good. This just changed the game for me though. Definitely trying it soon. (@ Tiny Urban Kitchen)
