I’m working at home these days and I typically just eat leftovers for lunch, but I remember well the struggles of the working lunch. Many people settle for a basic sandwich or they go out to eat. A good lunch though can fuel you through the afternoon and generally put you in better spirits and you’ll be more productive!

Sargento® contacted me a few weeks ago and asked me to come up with a quick but tasty lunch using some of their sliced cheeses and I was happy to oblige with this Horseradish Roast Beef Wrap. Of course, you could use any cheese for the recipe but I used a nice sliced Colby Pepper Jack that paired perfectly with the roast beef and horseradish sauce!

Horseradish Roast Beef Wrap

Wrap Basics

I say this Horseradish Roast Beef Wrap takes 10 minutes to make but that’s a stretch. I feel like I could make four of these in 10 minutes actually. There is really just a few basic ingredients. Be sure to buy the large tortilla wraps so you can really stuff them full.

Horseradish Roast Beef Wrap - Just some good basic stuff.

The wrap could be a bit dry on its own so I whipped up a quick sauce that I highly recommend. It’s basically just 3 parts mayo, 3 parts mustard, and 1 part horseradish. Stir these all together and you’ll be in good shape. I used 1 tablespoon mayo and mustard and then 1 teaspoon horseradish which was the perfect amount of sauce for one wrap.

A basic sauce.

You may not need a walk through on this, but here’s how to…

Make the Horseradish Roast Beef Wrap

Step one is just to slather that delicious sauce over the tortilla!

Then add the roast beef and sliced cheese.

Then add a huge handful of fresh arugula and sprouts. Try to position all of these ingredients in the center of the tortilla and fold the ends of the tortilla over the filling. This will lock in the ingredients so they don’t spill out the ends.

Then roll up the tortilla. Work slowly here and try to get it nice and tight so the ingredients stay put.

You don’t exactly need to slice this Horseradish Roast Beef Wrap in half, but I like to show off the fillings!
