These are grown up waffles. Slightly crunchy and dense with just enough sweetness. I like to serve mine with a chili honey butter!


1 1/2 cups blue cornmeal
1 cup all-purpose flour
1/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups buttermilk
1/4 cup honey
2 large eggs
1/2 cup butter, melted

Chili Honey Butter

1/4 cup butter, softened
2 tablespoons honey
1 teaspoon chili powder


  1. Mix together blue cornmeal, flour, baking powder, baking soda, salt, and brown sugar. (You can sub regular cornmeal for blue cornmeal if you can’t find it.)
  2. In a separate bowl, whisk together buttermilk, eggs, honey, and melted butter.
  3. Stir wet stuff into dry stuff.
  4. Add about 1/2 cup of batter to a preheated waffle iron (spray with nonstick spray if necessary). Cook until done (different times for different waffle irons).
  5. Finished waffle should be browned and crispy on the outside and cooked through.
  6. Cook all waffles.
  7. Serve warm waffles with chili honey butter and extra honey to drizzle (or syrup if you want)!
