Over the years, I’ve cooked around 700 different recipes that have been posted on Macheesmo.
My wife, Betsy, has tried almost all of them.
In my first cookbook, Cornerstone Cooking, I made a note in the index to signify which meals in the book were Betsy’s favorites. A lot of people thought that was cool so I thought I would do something similar for Macheesmo.
As I mentioned in the book, it’s important to note her favorites just because she has very good taste evidenced by the fact that she married me!
Ironically, the above photo was never posted on Macheesmo because it was for our anniversary dinner this year and I didn’t want to bother with photographing the whole meal.
This post contains twenty of her favorite meals though, broken down by meal.
During the week, Betsy and I normally eat pretty much the same thing every day (a smoothie, granola, or oatmeal depending on the season). On the weekends though, we make other stuff. Here’s a sampling of her favorites.
Betsy’s Breakfast Smoothie – This is our daily smoothie during the summer months. It’s a healthy way to start the day and keeps you pretty full until lunch.
Baked Oatmeal – This is a really rich breakfast but is awesome because you make it the night before and then it’s pretty quick to throw together the day of.
Breakfast Bruschetta – Betsy likes this so much that she still requests it anytime we have guests. Frankly, I’m getting sick of making it.
Chicken and Waffles – A bit ambitious maybe, but a wonderful combo. We occasionally like to throw big brunch parties where we cook a bunch of chicken and waffles and put all of our friends into food comas.
Bacon Stuffed Corn Cakes – A recent creation but we’ve made them twice in a few weeks which is rare for us.
Betsy and I both try to eat pretty healthy for lunch. We make big batches of salads or sandwich stuff on the weekends and use it for the next week. Here’s a few of her favorites.
Baked Falafels – Pretty healthy and easy to transport. Lots of fun toppings keeps it fresh and interesting.
Stecca Sandwich Bread – Bets used to be a big turkey sandwich person. She loves this sandwich bread. It’s some of the best sandwich bread I’ve had.
The Number 48 – I think she may have forgotten about this sandwich, but she’ll probably request this immediately after reading this post. It’s more of a weekend lunch, but really awesome.
Rainbow Wheat Berry Salad – This is a variation on one of those lunch salads that we make. We make some sort of wheat berry situation at least once a month.
Pesto Quinoa Salad – Similar to the wheat berry salad, quinoa salads are pretty popular in our house for lunch options.
This was a tough one to narrow down because I could’ve just re-listed the entire tex-mex section. I’ll do my best though to narrow it down to five.
Persimmon Risotto – An unexpected dish for this list. I’m pretty sure that she liked it enough to include it. I was shocked by how good it turned out.
Short Rib Ragu – Possibly her favorite dinner that I make that isn’t tex-mex related.
Cauliflower Mac and Cheese – One of the first recipes I ever posted and one of her favorite to this day.
Crunchy Tempeh Tacos – Had to put a taco on the list. These were just shockingly delicious.
Near Perfect Nachos – I’ve made a lot of nachos over the years, but she still raves about these because I made the chips and individually topped each chip. Pretty hard to beat.
That was honestly tough to do.
Betsy and I don’t have much of a sweet tooth, but here’s a few things that she would probably eat again if I twisted her arm.
Angel Food Cake – Most people like angel food cake, but Betsy loves the stuff. This is a great homemade version.
Chocolate Babka – Also a good brunch dish, but she has requested this stuff on more than one occasion. Kind of a pain to make, but really tasty.
Chocolate Chip Monkey Bread – Awesome little small balls of rich dough. Almost like an entire cake of donut holes!
Buttermilk Peach Ice Cream – Rich and tangy, this was perfect when peaches were in season.
So there you have it! Basically, if you make something from this list, you’ll probably be pretty happy with the results!
