A Stroll Through the Farmer’s Market
Farmer’s markets are all the rage these days and I think that’s fantastic. Even small towns seem to have a few little stands where you can find fresh, local produce time of year. I encourage you to take a spin through your local market. You might be surprised at what you can find.
This week’s meal plan is all about vegetables and fruits that are heavily featured in farmer’s markets, but also stuff that is nationally available. Zucchinis, peaches, mushrooms, peas… you’ll find it all inside.
If you don’t have a market near you (or just can’t get to one), no worries. All of the stuff in this plan can be found in grocery stores and it will be at its peak right now!
This weekly meal plan includes:
- Tex-Mex Zucchini Boats and Homemade Guacamole
- Farmer’s Market Stir-Fry with Cilantro Rice
- Grilled Pork Tenderloin (or Tempeh) with Fresh Peach Salsa and Veggie Grill Packs
