The Internet Kitchen: Land of Enchantment

This week I had to take an emergency trip to New Mexico to help my grandmother move into a nursing home. My mom and I are going together to clean out her house and get her all set up in her new home which I think will be a great move for her.

She will be in a social environment and won’t have to worry about cooking or driving anymore.

Unfortunately, I’ll be working pretty hard the whole time I’m there making sure she is comfortable, but hopefully I can get a few good Mexican meals also while I’m there!

The Perfect Scallop - I’ve secretly watching Hell’s Kitchen this season and it is amazing to me how often those very experienced cooks mess up scallops. Like… they just can’t do it right. This is a good walkthrough and exactly what I do when I’m cooking them at home. They always come out great. (@ Arugula Files)

Caterpillar Rolls - When Betsy and I go out to sushi, we almost always get some sort of roll wrapped in avocado. This one looks just perfect. (@ No Recipes)

Cilantro Chicken - Cilantro haters look away! This recipe is jam-packed with cilantro and I love every leaf of it. The chicken is marinated in what is basically a cilantro slurry. Sign me up! (@ Recipe Girl)

How to Smoke Salmon - If you are lucky enough to have access to really fresh salmon this year, maybe try your hand at smoking some of it! I would if I could! (@ Hunter Angler Gardener Cook)
