Muffin Breakfast Pizzas
I don’t know about you, but I almost always purposely order or make more pizza than I can eat so I can snag a cold slice for breakfast the next day.
Cold pizza with maybe a drizzle of Sriracha? Yes, please.
On this particular day I happened to not have any cold pizza and really wanted pizza for breakfast so I whipped up these quick little breakfast pizzas using a few things I had around.
These make for a pretty hardy breakfast and a great way to start the day!
English Muffin Breakfast Pizzas
Yield: Serves 2.
2 English muffins
3-4 strips bacon, crispy
1 large heirloom tomato
1 tablespoon fresh basil
4 ounces Mozzarella cheese, grated
Salt and pepper
1) Cook bacon in the oven or in a skillet over medium-high heat until it is browned and crispy.
2) Dice bacon along with tomato. Stir together and add minced basil.
3) Stir grated mozzarella cheese into toppings and season with salt and pepper.
4) Cut two English muffins in half and lay on a baking sheet. Drizzle with olive oil and divide topping mixture between muffins.
5) Bake at 400 degrees for 8-10 minutes.
6) Serve immediately!
There’s really only four ingredients in the toppings for these guys. I wanted to keep it pretty simple.
I had a few slices of bacon in the fridge so I just fried them up until they were pretty crispy. You could skip these if you wanted and just make a veggie version but if you do that you might want to throw in an extra tomato to make sure you have enough toppings.
Since I was just cooking a few pieces, I cooked my bacon in a skillet over medium heat for about 8 minutes until it was crisp.
If I would’ve been cooking more, then I would’ve used the perfect way to make bacon obviously.
You should have no trouble finding a really ripe and delicious tomato this time of year and a few sprigs of basil just makes the flavors really summery and awesome.
The topping is pretty simple. Just dice up the bacon and tomato and then stir it together with the chopped basil.
Nothing too complicated, but the flavors are awesome.
Then grate in your cheese!
For these pizzas I like to stir my cheese in with the other toppings instead of doing a layer on the muffins. When the cheese melts it’s evenly distributed throughout the topping which I think is a bit better for this dish.
To make the pizzas, just half a few english muffins (there is only one pictured but the recipe makes two). I recommend lining the baking sheet with foil to make for an easier clean up.
Then drizzle the muffins with some olive oil and distribute the topping mixture evenly between the muffins. You should be able to pile it on.
Bake these guys at 400 degrees for 8-10 minutes and you’ll have some really wonderful little pizzas.
The muffins gets really crispy and delicious and I don’t think I need to tell you that it’s hard to go wrong with tomato, basil, mozzarella, and bacon…
I’m sure you could get creative with the toppings, but I’ll warn you, it’s pretty hard to beat the standard combo assuming you can find a good tomato or two.
