  1. Love this idea. Yesterday I had spinach feta fritatta for brunch at a restaurant. Now, I’m thinking wouldn’t this also be great with pizza dough. The touch of red peppers is nice too.

    Seriously, that spanakopizza looks extra crispy and great. It looks like it feels lighter than air and I can imagine biting into a piece. Sigh….is lunch really 2 hours from now?

    If I’m not mistaken, I think that Mollie Katzen beat both you and Rachel Ray to this one. I think she may have had a similar recipe in one of her Moosewood cookbooks from the 1970′s. She also had a zucchini crusted pizza that is killer! I haven’t made it in years but it was really good. Let me know if you want the recipe, I still have her books…

  11. Since some of my Favourite-Cookbooks-Of-All-Time are the Moosewood’s by Mollie Katzen I just *had* to concur with Mimi.

    You will find Mollie’s “Greek Pizza” in her “Enchanted Broccoli Forest” pg 141, and it IS “Yumm-O”. (You did realize RR just re-reads old cookbooks to find her ‘new ideas’?)

    Everything old is new again….or “there’s nothing new under the sun”…whatever your preference!
    I prefer to always say “Great Minds think alike”, especially in your case. Hats off to you once again.
