I am so with you on the thin crust pizza! I hate limp pizza.

We just moved back to our hometown (St. Louis) and there is a place called Pi that Obama loves. Haven't had a chance to go there, but will soon.

Crust is the most important thing. Here in nashvegas, my pizza has to come from my own oven. I found the secret in Marcella Hazan's book...it takes a lot of kneading and work, and waiting but it's soooo worth it. I will put this book on my "wish" list, because we take our pizza seriously, and I can tell I would learn a lot. There is always more to learn with the simplest of this great globally loved food.

This is really weird. I just ordered this book on Amazon yesterday. I, too, have Peter Reinhart's The Bread Baker's Apprentice and knew that he was going to be the go-to guy for pizza crust.

I am hoping this book has some options for me, as I DO live in one of those places where good commercial pizza is still but a dream. I also know that it will be difficult to get the traditional high protein flours that most pizzerias use. Maybe Peter can see me through the leans times. Ha!

Great review. Glad to know I've probably ordered a great pizza cookbook.

I love Reinhart's Bread Baker's Apprentice, so I will have to check out this book. Like you, I live hours away from decent pizza, so I learned to make homemade pizza out of necessity. It's gotten so I'm incredibly picky about restaurant pizza. Mine is almost always better. :)
