  3. Good post. I made a batch of Italian sausage two weeks ago from a Good Eats recipe. It was awesome. I also made some andouille from this website: http://www.nolacuisine.com/2005/11/14/andouille-sausage-recipe/
    Again, awesome. Now I’m going to have to try this bratwurst recipe next time pork butt is on sale. Thanks for the tip on the casing company.

  4. HOLY COW! good job!!! These are outstanding!! Tucker is quite the cute pup. Man, i wish i had a meat grinder AND a sausage stuffer. These look so good.

  5. Um…YEAH, I would buy those! I’m so impressed. I actually got a sausage grinder attachment for my KitchenAid for Christmas and have been meaning to try making my own sausage. To be honest, what was holding me back was not knowing where to get the casings so thanks a lot for the resource. Can’t wait to give this a try.

  10. Love the post – excellent info, came here seeking info on freezing the brats. When I boil ‘em in beer, we add some hot italian giardiniera for an extra spicey taste treat yum!
