  1. Nick, this looks fabulous! Funny that we both did pizza. Ha. I too was worried about the other flavors overpowering the mushrooms on the pizza, but they really shined through on ours as well, even with the chicken sausage. I think the freshness of the mushrooms is key, and I believe the oyster variety has much more flavor in general than say, button.

    Anyway, we had a blast! Looking forward to seeing what people think.

  3. I love anchovies and oyster mushrooms because they are so versatile I really enjoyed your creative use of the secret ingredient(s). In the first course, the saltiness of the anchovies cut the creaminess of the mousseline, and blah, blah, blah (we’ve all heard this rant 100 times).

    FYI: I own a Le Creuset pate terrine which you are more than welcome to borrow to avoid the above rig, notwithstanding it’s hilarity, of course.

  6. I love how you are willing to try something complicated and out of the ordinary. Did the anchovies on the pizza taste nutty or fishy?
