  1. Jay Farbstein has some risotto cooking tips for you. Believe it or not, this is my friend’s dad. My friend discovered the existence of this while, I kid you not, leafing through a coffee table book and eating some of his dad’s leftover risotto.

  2. I love rice and was immediately intrigued when I first read this post. Finally got around to trying the recipe.

    Changes I made: skipped the onions, none on hand, and I used brown rice.

    It worked well and was absolutely delicious. However, the ‘stirring and adding hot stock’ part took a good hour. And used most of my stock.

    Well worth it, tho. Thanks for an awesome recipe.
