Best review on this book yet. I was still unsure after reading others, but your example made it much more clear, as well as your description. Now I want it in my collection...along with Marcella Hazan's 'The Essentials of Classic Italian Cooking'. Keep up the good work.

Hey Gansie:

I do wish they dedicated 10 or 20 more pages to the philosophy behind cooking and matching flavors. I found that all extremely interesting. As is though, it is still a fantastic resource.

great write up. i'm not sure how you feel, but i do wish they dedicated more pages to the philosophy of cooking and flavor and less on the charts.

Very useful to know more about this book, thanks! I like these authors (Culinary Artistry was outstanding). Is this all new content, or does some of it overlap with their previous work?

I've been wondering about this book A LOT, since everyone is writing about it. So far, your review is the best one I've read. I think I'll add it to my Chrismast list.
